This week’s challenge was to make a meal that would satisfy both my taste buds and my best guy friend’s hungry stomach.  If there’s one thing I know for sure, the way to a guy’s heart (and satisfaction) is through his stomach, and the one way ticket to his stomach is BACON!  So bacon wrapped chicken was the plan and boy was it delicious!  I even had plenty of healthy leftovers to take to work the next day.


10 Chicken Tenders, boneless and skinless
10 Strips of Bacon
2 Tbsp. of Cilantro[1], chopped
1 ½ Tbsp. of Dijon Mustard
2 Tbsp. Raw Honey
¼ Teaspoon Black Pepper, to season
¼ Teaspoon Salt, to season


Preheat oven to 400 degrees. These can also be grilled if you want crispier crunchy bacon.

In a large bowl combine the chicken strips, cilantro, mustard, honey and seasoning. Combine well with your hand.

Wrap each piece of chicken with a strip of bacon and lay in an ungreased baking dish.

Bake in the oven for 30 minutes or until the juices run clear.

Caloric info: 157 calories per chicken strip

[1] My grocery store was out of Cilantro at the time! Crazy, I know but cilantro paste can be substituted in case this happens to you too!
