week 9: Parchment Paper Chicken

This past week was extremely busy for me- I had a leadership convention over the weekend and had to come home a little bit early to care for my sick boyfriend.  In the process of researching delicious chicken noodle soup recipes for my sickling, I came across an adorable presentation and settled on making this recipe.  {I did not have enough time or my usual kitchen supplies to take pictures of the finished soup product} But I loved the chicken preparation so much I decided to use my leftover soup herbs to make round deux a few days later.

ingredients:

1 pound of chicken breast
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
thinly sliced white onion
2 sprig fresh thyme
2 sprigs fresh tarragon

directions:

Preheat the oven to 350 degrees. Place a large piece of parchment paper on a baking sheet. Place chicken on the center of the paper, season both sides of the chicken with salt and pepper, then drizzle with olive oil.  Sprinkle with onions and arrange the thyme and tarragon on top.

Fold one side of the paper over the top of the chicken and roll up the edges of the paper to create a pouch. Bake at 350 degrees for 25-30 minutes until the chicken is done.

This chicken is not only super healthy, but the fresh herbs make it incredibly tasty!  I highly recommend using parchment paper chicken in chicken noodle soup or even as a topping to a simple salad- you won’t regret it- I promise!
