week 14: baked fries & pesto aioli

My clever idea to give up fast food for 40 days and 40 nights has finally come to an end, but still wanting to avoid ruining my diet with a tip to Mickey D’s, I decided to try baking my own fries.  Now this is not my first try in the fry baking realm, but it is my most successful.  And let me tell you the secret- soaking the already cut potatoes!! It releases the starches so the potatoes get more crispy and have a similar texture to their deep fried cousin.

These fries were so delicious, I’m already thinking of the next meal to pair them, perhaps with a tender steak and balsamic roasted artichokes!

ingredients:

2 potatoes ( i used one red and one white potato because that’s what I had on hand)

2 tablespoons olive oil

salt and pepper, to season

directions:

Slice washed potatoes into wedges and soak in a bowl of ice water for at least 20 minutes!  DO NOT skip this step!!

After 20 minutes, pat the potatoes dry and toss with oil.  Lay out on baking sheet in a single layer.

Bake at 425 degrees for about 30 minutes- flipping once at 15 minutes.  Remove once potatoes are crispy and have a nice brown color.  If desired, season with sea salt & fresh ground pepper (or any other seasoning!).  Serve hot and paired with the pesto aioli recipe below.

pesto aioli:

2 garlic clove, minced

2 tablespoons of store bought pesto

1/2 cup light mayonnaise

Combine mayo, pesto & minced garlic cloves in bowl and serve immediately.
