The first time I saw this recipe on Pinterest, I didn’t know if I should believe all the hype. Of course the original “OMG” Chicken recipe I found was made with mayo, so I decided to make a healthier version, using Greek Yogurt and a bit of sour cream! To keep the meal on the lighter side, I served with some steamed peas to balance out the creamy chicken. I wish I had made extra, so I could put it in a pita pocket with shredded lettuce and tomatoes for a lunchtime treat!
2 chicken breasts
1/2 cup plain greek yogurt
1 tablespoon light sour cream
1/4 cup parmesan cheese
2 tablespoons panko breadcrumbs
Place greek yogurt, sour cream and cheese in a small bowl and mix.
Lay chicken breasts on baking sheet and spread cheese and yogurt mixture evenly, then sprinkle with panko.
Place in oven and bake for 20-25 minutes or until chicken is cooked thoroughly and juices run clear. Tops will be browned and chicken will be incredibly juicy. You can also finish them off under the broiler for a minute or two to get them extra browned on top.
Season with a dash of fresh cracked pepper and sea salt, if desired.
