Garlic Roasted Vegetables

I know it may seem silly, but until a few months ago I didn’t know the best way to roast vegetables. I was so inept that I even googled it, so this recipe is for my cooking newbies, who just need a little wake up call into the land of roasted veggies! I personally love roasted brussel sprouts and broccoli, but you can use this recipe for almost any kind of vegetable!

ingredients:

1 lb. Vegetables
1 Tablespoon Olive Oil
2 Cloves of Garlic, minced
Salt & Pepper, to taste
Crushed Red Pepper, to taste

directions:

Preheat oven to 400 degrees and line a baking sheet with aluminum foil.

Rinse your vegetables under cold water and cut off the ends.

In a bowl, roll around your vegetables with the olive oil, minced garlic, salt, pepper and crushed red. Just until they look like they’re coated well.

Place on foil lined sheet and bake for 10 minutes, then rotate the vegetables on the pan. Back for another ten minutes or until lightly browned.
