Week 20: Breakfast Smoothie

As much as I love a Sunday {or Saturday} Brunch, I am horrible about eating a filling and yummy breakfast before work on the weekdays. I need at least a cup of coffee to get my brain working and most mornings that means breakfast comes after and usually at work. I stumbled upon this breakfast smoothie recipe from a friend on facebook and decided to give it a try. It has become a staple in my morning- first cup of coffee by 8am, smoothie at 8:30 and second cup of coffee to follow. Not only does this smoothie keep me full until lunchtime, but it tastes great! I’ve even tried using bananas instead of apples- and that’s a great option if apples aren’t your thing, but the apple version is still my favorite!

ingredients:
1 cup uncooked quick oats
3 cup sweetened almond milk
1 tablespoon peanut butter
1 tablespoon flax seed
2 chopped red apples
1 teaspoon cinnamon

directions:
Put all ingredients in a blender and blend until smooth.

Store in an air-tight container (like a Mason Jar) in the fridge for up to 3 days, or freeze them for later!
