Week 21: Bacon & Cheese Pull Aparts

For our monthly potluck dinner, we decided to try Breakfast for Dinner! I haven’t been ashamed to admit that brunch is my favorite meal, but since we all work 9-5 jobs, okay an 8-5 job in my case, we don’t get to treat ourselves to the best that breakfast has to offer. I had made this pull apart recipe once before for the USC homecoming football game. They are a great start to the day and super simple. You can precook the bacon and whip it up in 10 minutes, bake for 25 and breakfast is on the table.

ingredients:
2 eggs
2 tablespoons milk (I used almond milk)
1 can Flaky Layers Refrigerated Original Biscuits
1 pkg. precooked bacon, cut into 1/2-inch pieces
3 oz. shredded Cheddar cheese
1/4 cup finely chopped green onions

directions:
Heat oven to 350°F. Spray 11×7- or 12×8-inch glass baking dish with cooking spray. In large bowl, beat egg and milk with wire whisk until smooth.

Separate dough into 8 biscuits; cut each into quarters. Gently stir biscuit pieces into egg mixture to coat evenly. Fold in bacon, cheese and onions. Spoon mixture into sprayed dish; arrange biscuit pieces in single layer.

Bake at 350°F. for 25 minutes or until golden brown. Cut into squares
