Make Ahead Breakfast Sandwiches

Breakfast sandwiches are one of my favorite guilty pleasures- whenever I am hungover or craving a sodium rich treat- the perfect combination of eggs, bacon and cheese are my go to! I’ve been trying to brighten up my breakfast options over the past couple weeks and this recipe is the perfect recipe for a bigger breakfast on a working morning.

Make Ahead Breakfast Sandwiches

ingredients:

English muffins, toasted
Whole eggs
Sliced Cheese
Canadian bacon slices, warmed
Black Pepper, freshly ground

Make Ahead Breakfast Sandwiches

directions:

Spray the muffin tins with cooking spray and add an egg to each one and put them on a baking sheet to make it easier to get them in and out of the oven. I pierced each egg to spread the yolk around more.

Add freshly ground black pepper to your preference. Bake eggs at 350 degrees for 25-30 minutes, until set.

While the eggs bake, prepare the muffins by splitting them open and toasting, then add cheese slices and Canadian bacon slices. Add the baked eggs when they’re ready.

Wrap for microwave reheating. I wrapped mine in dry wax paper and put them in freezer ziploc bags and freeze them. It takes under a minute to reheat a thawed sandwich at full power in the microwave. I personally reheat the egg portion for about a minute and a half and the rest of the sandwich for 30 seconds. They can also be warmed up in the oven, if you’re willing to take the time, about 15 minutes.
