Buffalo chicken is no stranger to bake, broil & blog, but this healthy chicken salad alternative really brings the heat to an everyday classic. Try pairing the chicken salad with lettuce cups, pita pockets or your carb of choice- it makes a great lunch for work or even picnicking- the possibilities are endless!
5 oz non-fat plain Greek yogurt
1/3 cup Franks Red Hot Wings Buffalo sauce
1/2 tsp garlic powder
1/4 tsp fresh ground black pepper
1 lb boneless, skinless chicken breast, shredded
2 celery stalks, finely chopped
1/2 cup cilantro, minced
1/2 cup crumbled gorgonzola
In a large bowl, whisk together yogurt buffalo sauce, garlic powder, and black pepper. Stir in chicken, celery, cilantro, and blue cheese.
Serve with as a sandwich, lettuce cup, or pita pocket.
