Another weekend of football, another easy and satisfying meal to keep your football viewers full and happy, even if the game isn’t quite going their way. This week, the 49ers had a Thursday game, so Sunday was all fun and games when it came to our viewing party- okay maybe it wasn’t fun that my Fantasy Football team lost pathetically- but if the niners won, I’m happy taking the L for the team.
I’ve been wanting to try a new taco recipe for awhile now. I’ve already conquered carnitas, and stove top beef tacos have always been my go to, so I decided it was time to find the perfect chicken taco recipe. Bill and I might be slightly obsessed with Mexican food- you can pretty much find us at Taco Tuesday every week, as long as work doesn’t get in the way. I wanted to find a recipe that was comparable to the delicious and moist chicken tacos we have at our Taco Tuesday haunt. I knew I needed to use my crock pot to capture all the moisture and that’s when I found the perfect recipe on Family Fresh Meals. I expected more of a “cool ranch” flavor, but over all the tacos turned out delicious and perfectly moist.
4 chicken breasts
1 packet of taco seasoning
1 packet of ranch dressing
14 ounces of chicken broth
Rinse chicken breasts in water and pat dry. Place chicken breasts, taco seasoning, ranch dressing mix and chicken broth in crock pot.
Set crock pot on low for 5 hours. After 5 hours, shred chicken with 2 forks. Replace lid and continue cooking on low for 30 more minutes.
Serve shredded chicken on soft tacos with your favorite toppings.
