Kale chips might be all the rage these days, but their close cousin spinach chips are just as easy to make and just as tasty! I stumbled upon this recipe trying to use the giant bag of spinach I didn’t get a chance to eat last week. This is a simple way to use that excess spinach before it wilts and the perfect way to add a healthy snack to your menu.
2 cups spinach leaves
1 tbsp olive oil
Seasoning, to taste (I used Oregano, Pepper and Garlic)
Salt, to taste
Preheat the oven to 325 degrees F and line a baking sheet with foil. Set aside.
In a bowl, put the spinach leaves. Put olive oil and mix it well without breaking or tearing the leaves. Sprinkle salt and your choice of seasoning and mix well till all leaves are coated.
Arrange the leaves in a single layer without any overlaps on the foil lined baking sheet.
Bake in the oven for 7-8 minutes. Remove from the oven and let it sit on the baking sheet for another 2 minutes.
Using a spatula, transfer them into a bowl or plate.
