Heirloom Tomato & Burrata Salad

Creamy, cheesy, fresh and delicious are just a few perfect words to describe this delightful salad.  There probably isn’t a quicker or tastier way to enjoy a serving of vegetables.  After a long day at the office, it’s refreshing to come home and whip up my version f comfort food.  I could probably eat a million different versions of caprese and never get sick of the flavor combo.  Next time, I think I’ll add some homemade croutons to add a crunchy aspect to this fantastic salad.

Heirloom Tomato & Burrata Salad

2 balls fresh burrata cheese
4-6 heirloom tomatoes, sliced
handful of fresh basil leaves
extra virgin olive oil
balsamic glaze
kosher salt and freshly ground black pepper

Heirloom Tomato & Burrata Salad

Arrange the tomatoes in a bowl around the burrata cheese. Sprinkle with fresh basil leaves then drizzle with extra virgin olive oil. Top with balsamic glaze and season with kosher salt and freshly ground black pepper.
