Chocolate Chip Muffins
First off, there are very few words to use to describe this next recipe- get ready because it’s about to blow your mind.  These muffins are the best healthy indulgence food ever- yes, I said ever- and I meant it.  I was extremely cautious when I followed the ingredients and was worried when I tasted the batter and it was borderline gross and biter.  Don’t be fooled, these muffins come out chocolately and delicious and worth ever calorie.  There are only 95 in each muffin, so I would say they’re worth double or maybe triple the calories!

Chocolate Chip Muffins

1 3/4 cup quick oats
3 egg whites
3/4 cup unsweetened cocoa
1/2 cup unsweetened applesauce
1 tsp Vanilla extract
1/2 cup plain greek yogurt
1/2 tsp cream of tartar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1 cup hot water
8 packets stevia
1/2 cup semi-sweet chocolate chips

Chocolate Chip Muffins

Preheat oven to 350 degrees and spray muffin tin with non-stick cooking spray. Set aside.

In a food processor, mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth. Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans.

Place muffins tins in the oven for 15 minutes. After 15 minutes, remove muffins from the oven and top each muffin the remaining chocolate chips.

Place the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean.
