Chickpea, Feta & Cilantro Salad

Chickpea Salad

Very rarely do I find a side dish that is good enough to post as a full blown recipe post.  That all ends with this delightful chickpea salad.  I love the flavor profile in this side so much, I plan on making it again for my meatless friday meal.  The citrus dressing is super refreshing and the chickpeas are protein packed leaving you nice and full.

Chickpea Salad

1 medium onion, diced
3 cloves garlic
1 1/2 tbs olive oil
Pinch red chili flakes
2 14oz cans of chickpeas
4 scallions, green part only, chopped
1/2 cup chopped cilantro
Juice of one lemon
5 ounces feta cheese
Salt and pepper

Chickpea Salad

Heat 1 tablespoon of olive oil and cook the red onion till lightly golden. Add garlic and chili and cook till the garlic is fragrant. Set aside to cool for 10-20 minutes.

Drain the chickpeas, rinse and place in the salad bowl. Add crumbled feta, spring onion, cilantro and lemon juice, season with salt and pepper. Add the cooled onion and garlic mixture and remaining oil and mix well.
