Roasted Red Pepper Alfredo Pasta

Serious question, when did it actually become October? Can we talk about where the summer has come and gone? I for one am not ready to say goodbye to sunny summer days, BBQs and trips to the beach. Yes I might be being a little dramatic seeing as I live in Southern CA, but once the temperature drops below 70, I become cold blooded.  It’s a native Angeleno thing, trust me.

While contemplating the loss of all our summer months could take hours, maybe even days or weeks, this recipe will only cost you 30 minutes. Yep! That’s right 30 minutes for an alfredo that will rock your socks off and have your family asking for seconds. Even, Aspen wanted to try… {okay maybe just the chicken, but that counts right?}  The alfredo sauce is flavorful and creamy and the chicken adds a nice bit of spice to make a well balanced dinner for everyone in my household.

Roasted Red Pepper Alfredo Pasta with Chicken

1 lb chicken breast
blackening spice
black pepper, cracked
garlic salt
cayenne pepper
12 ounces linguine
2 tablespoons olive oil
2 cloves garlic, minced
1 onion, diced
1/2 cup milk
1/2 cup heavy cream
4 ounces crumbled goat cheese
1/2 cup grated Parmesan, plus more for garnish
1 (12-ounce) jar roasted red peppers, drained and chopped
Kosher salt and freshly ground black pepper, to taste

Roasted Red Pepper Alfredo Pasta with Chicken

Season chicken breast with blackening spice, black pepper, garlic salt and cayenne pepper, if you like a little spice. Grill over medium for about 7 minutes each side, depending on the thickness of your meat. After chicken has cooled, slice diagonally.

Meanwhile, cook pasta according to package instructions, rinse with cold water and drain well.

Heat olive oil in a saucepan over medium heat. Add garlic and onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes. Stir in milk, heavy cream, goat cheese and Parmesan until cheeses has melted, about 1-2 minutes.

In your food processor, combine the red peppers and with the above sauce and puree. Return sauce to pan and stir in the pasta and sliced chicken; gently toss to combine and season with salt and pepper.
