KFC is one of those places I love to hate, but really do love. There’s something about those creamy mashed potatoes, savory gravy and crunchy battered chicken that keeps you going back for more. I’m definitely not one of those fast food haters, but I would probably feel pretty bad about eating habits if I ordered in from KFC more than once a month. So this recipe is the perfect solution! Yummy fried flavor, but using a fantastic oven baked process instead. I found the chicken to be moist and tasty and not overtly oily or fried, so I actually felt good after dinner, not weighed down with a fried fatty food feast. Serve it up with some cauliflower mashed potatoes and corn and you’re good to go! Healthy never tasted so good.
3 chicken breasts, cut in strips
4-5 tbsp butter
1 cup flour
½ tsp salt
1 tbsp seasoning salt
½ tsp pepper
2 tsp paprika
Preheat oven to 400 degrees F. Place butter on a large baking sheet and place in the oven to melt.
Combine all ingredients besides chicken and butter in a large ziploc bag. Add the chicken and shake to coat. Make sure each piece is evenly coated.
Take your baking sheet out of the oven once the butter has melted and place your chicken on it, leaving a space between each strip. Bake 10-12 minutes, flip gently with a pair of tongs, and bake another 10-12 minutes.
Remove to a plate lined with paper towel to soak up any excess grease. Serve immediately.
