Avocado Toast Two Ways

If you follow me on instagram, you have witnessed my avocado toast obsession first hand.  Not only is avocado toast an easy option for breakfast, brunch and even lunch, but there so many different options to spice it up!  I love mixing it up and topping my toast with lox and maybe even some sprouts.  The combinations are countless and endlessly delicious.  I used to always cook up a fried egg with avo and sourdough, now I’m obsessed with whole grains and scrambled eggs, and sneaking in more veggies!  What are your favorite avocado toast options?

ingredients:
2 slices wheat bread
1 avocado
1 sweet pepper (if you prefer spicy, opt for a jalepeno)
2 Tbsp mild salsa
1 egg

directions:
Toast each slice bread and spread with 1/2 ripe, avocado. Top one with sliced sweet peppers and add two tbsp of mild salsa to the other.

Spray a small nonstick skillet with cooking spray and scramble one egg over low heat.  Place cooked egg onto salsa topped avocado toast, sprinkle with salt and pepper as desired.
